Start checking multi connectors under the dash for corrosion,loose wires
Maybe a wire on the back of the cluster

Maybe try pushing against the slave cylinder plunger and put pressure on it
Open bleeder and depress the piston totally and close the bleeder. Should get any air that may be trapped in the slv cyl out

And pump it up and see what happens

For thermostat dont try to be tricky

Rad,shroud,fan,belts not that hard to get off. Just get it all out of the way

And when taking off the hoses start from the bottom and work your way up. Just like the oldlady :D

Could be thermostat housing seal, a hose,water pump,radiator ????
