Three final choices !

I need some outside opinion. I am all stock suspension now, with stock wheels, but will be going 2" lift as the next mod, once I replenish my bank account. I am mainly highway, lot of dirt roads and muddy ruts to go through to get some good fishing and hunting spots so all choices will be fine for me. I dont see snow so that means nothing to me. I dont care about noise either, I ran TSL's on another vehicle so these are nothing compared to those.
Either stay small and aggressive looking, or go bigger and less aggressive looking..

Kumho at51 - good reviews for all terrain with great wear and good look at 40lbs, just the smallest least aggressive look
$140 per tire

Goodyear Authority - standard size but much meatier look, cant find weight
$155 per tire

Cooper at3 - 275 width which is great, but not as aggressive looking sidewall, and its an LT so heaviest at 52lbs
$175 per tire plus $70 rebate

Per the 2017 Consumer Reports Buying Guide, these are their top 5, all of which they "recommend":

1-Hankook Dynapro AT-M

2-Goodyear Wrangler All-Terrain Adventure w/ Kevlar

3-Michelin LTX A/T2

4-Cooper Discoverer A/TW

5-Falken WildPeak A/T01

Of those you are considering, the only one they list is the Cooper Discoverer A/T3, which sits at #8 on their list. My only issue with LT tires on an R51 is that they ride super hard on a vehicle that rides a bit hard and unsettled to begin with. Personally, I would go with the Hankook or Michelin, but, since it's not on your list, I guess I'll vote for the Cooper, but I would go with the 265/70-17 size.

Mark me down for the AT3 as well. To Smj's point, I have LT tires on my R51 and I feel most if not every bump.

Although I hear great results from all the tires you listed I have much experience with the Cooper A/T3 and it's been all positive. I have recommended them to many people that all like them. The best way to describe the Cooper A/T3 is "The tire does nothing perfect but never does anything wrong either!" It is good in all areas and excellent is many areas like rain and it is prob one of the best A/T tires in the mud I have ever used! "Most A/T tires stink in the mud" anyway the Cooper is a great overall tire.

Would you think there is a difference in the 265/70 Authority and the 275/70 Coopers since they both are LT ? I don't know if the size would change the ride at all ? I don't see my ride being too hard although I am on some stock highway tires right now.

I think as far as the ride, the size will be less of a difference than that of going from a passenger tire to a light truck tire. LT tires have a reinforced design with thicker sidewalls that are made to handle heavy loads and have better durability. They aren't much different than a commercial tire. They are typically quite a bit heavier than passenger tires. If you do a lot of off-road driving, especially on rocky terrain, the LT tires will be a benefit due to their heavier construction. However, if you do mostly highway driving, you will find a big difference in ride quality compared to a passenger tire.
Personally, on my '06, I noticed a big difference in ride quality just switching from Michelin LTX M/S2 tires to Nitto Dura Grapplers, which was still a passenger tire (although they do also have LT rated tires). While the Nittos have been a good tire, they definitely do ride harsher and I'll be going to either Michelin Defender LTX M/S or Kumho Crugen HT51 tires then next time around (I have stock suspension w/ Airlifts and do mostly highway driving).

I'm in need of new tires and I am trying decide between General Grabber AT2 or Yokohama Geolandar G015. Both AT tires at almost same price. Probably going to stay stock size (265/65R17).

I had wanted the Grabber AT2's as well, I read they were great and they looked great too. But I kept seeing 50/50 reviews that some would last 60k miles and some would blow belts in the first 6 months. Every tire has a chance, but it seemed more 50/50 on the generals than other big brands.

of those 3...the coopers. They were the winner of the best at tire in the side by side test that expedition portal did a year or two ago.
