265/70-17 is about as large as you can go on stock rims and stock ride height. With a 2" lift, you can go up to 285/75-17. A wider stance is generally better, especially after adding a lift. I think it also helps minimize rubbing when going up to 285's.
I have been running Toyo Open Country A/Ts for almost a year now and I like them. They have a good tread for both highway and off-road and have a 50000 mile tread warranty. Also, they will not break the bank. I got mine mounted and balance for $650.
